Converting a Cargo Trailer for Food or Vending: What to Know First
Most of the expensive mistakes in a concession conversion are made at the point of buying the shell.

A fair number of the cargo trailers that leave our lot become something else — a food trailer, a mobile vending unit, a market stall, a mobile service business. It is a good starting point and it is considerably cheaper than buying a purpose-built unit.
What we would say up front is that most of the expensive mistakes in a conversion are made when the shell is bought, not during the build. A few decisions at purchase save a great deal of rework.
Get these right at purchase
Height
The single most common regret. You will be standing and working inside it for hours. Additional interior height costs little at purchase and cannot be added afterwards at any sensible price.
Size, allowing for equipment
Equipment, counters, a sink assembly and a person all take more room than the plan on paper suggests. Undersizing is far more common than oversizing, and a cramped unit slows service every single day it operates.
Axle rating
A finished concession trailer is heavy — equipment, water tanks full, propane, product and fittings. Rate the axles for the loaded weight rather than the empty shell, because upgrading them later is expensive and awkward.
Wall construction
Stud and roof bow spacing determines what you can mount and where. Closer spacing gives you far more freedom when it comes to hanging equipment, and it is not something you can change.
Then the regulatory reality
This is the part people leave until after the build, and it is the wrong order. Requirements for mobile food units are set by state and county health departments and they are specific — about sinks, water capacity, surfaces, ventilation, fire suppression and more. They differ across state lines, which matters a great deal in a region where people work markets in two or three states.
